Scintilla

Scintilla is a Brut sparkling wine made using equal portions of Cabernet Franc and Chardonnay that are harvested at the perfect time to preserve the clean acidic character of the grape. This wine is made in the traditional method that is used in Champagne, France where the second fermentation is completed inside of the bottle to trap the bubbles. The Bright straw color has a brilliant reflection and fine beads. The aroma and flavors are extremely fresh and crisp reminiscent of acidic fruits such as lemon, green apple and pear, accented by a touch of yeast and toasted brioche. The finish is clean, long and showing beautiful acidity which is heightened by creamy overtones.

Fresh, fresh and refresh are the words that characterize our 2008 Sauvignon Blanc. Crystal clear and as pale as the yellow winter sunlight; you can actually breathe in the heady aromas of lime blossom, fennel, citrus white peaches, pears and fresh mown grass. Natural zingy freshness accentuates the fruity boquet with watering flavors of citrus, apples, pears and apricot. Perfect to wash down all manner of seafood; oysters would plead for this wine--then anything from crabs to clams. White Star

This is the first bottling of “White Star” and shows to be a complex but palate friendly style of wine. The varietal blend of Viognier, Traminette, Chardonnay, and Petite Manseng create layers of ripe tropical fruits that meld beautifully with the bright acidity. This wine is a perfect summer wine and the light residual sugar content makes it a great compliment to salads, as well as seafood or chicken dishes accented with cream sauces. White Star would also make a great pre-dessert wine to enjoy with soft cheeses and would help cleanse the palate before enjoying sweet or savory desserts. I would recommend enjoying White Star in its youth while it expresses the tropical fruit nuances that can truly please the palate.

Rose 2008

Rose" is a sure sign that spring has arrived. The beautiful light color is natural and is achieved by bleeding the juice from the skins of the Cabernet Franc, Merlot, and Tariga Nacional after 24 hours of skin contact resulting in the deep pink color with salmon hues towards the rim. The nose is rich with berries and spice with soft floral aromas. The palate continues with fresh strawberries and cherries accented by a dry finish similar to the dry Rose's of southern France. The wine is best enjoyed in its youth and is extremely versatile when paired with foods, mainly seafood or chicken dishes that have Mediterranean flair.

Petit Manseng 2008

Petit Manseng is a white wine-producing grape that originates in the Jurancon region of southwest France, where it is highly regarded. The 2008 vintage ripened the grape beautifully letting the grape reach 28% sugar at harvest. The amazing part about this vintage was the cool nights allowed this grape to retain naturally high acidity creating an amazing balance. The tropical flavors are jumping out of the glass with pineapple, mango, and candied citrus fruits backed with subtle nuances of spice and white flowers. The acidity carries the crisp, ripe flavors and allows the 5% residual sugar to become perfectly balanced as it resonates into a long clean finish.
